Ingredients

  • 1 pound of boneless chicken breasts thinly sliced
  • 2 tablespoons of vegetable oil
  • 2 cups of mixed vegetables such as bell peppers, broccoli, and carrots, sliced
  • 1/2 cup of low-sodium soy sauce
  • 1/4 cup of water
  • 2 tablespoons of honey
  • 2 tablespoons of rice vinegar
  • 2 cloves of garlic minced
  • 1 teaspoon of grated fresh ginger
  • 1 tablespoon of cornstarch
  • Optional toppings: sesame seeds sliced green onions

Instructions

  • In a small bowl, whisk together soy sauce, water, honey, rice vinegar, minced garlic, grated ginger, and cornstarch. Set aside.
  • Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the sliced chicken to the skillet and stir fry until cooked through and lightly browned. Remove the chicken from the skillet and set aside.
  • In the same skillet, add another tablespoon of vegetable oil and the mixed vegetables. Stir fry for about 4-5 minutes until they are tender-crisp.
  • Return the cooked chicken to the skillet with the vegetables.
  • Give the teriyaki sauce a quick stir and pour it over the chicken and vegetables in the skillet.
  • Continue cooking, stirring frequently, until the sauce thickens and coats the chicken and vegetables evenly.
  • Serve the Teriyaki Stir Fry over steamed rice or noodles, and garnish with sesame seeds and sliced green onions, if desired.

Notes

To enhance the flavors of this Teriyaki Stir Fry, marinate the sliced chicken in a mixture of soy sauce, ginger, and garlic for 30 minutes before cooking. This step infuses the chicken with extra layers of savory goodness and makes it even more tender and flavorful.
