Ingredients

  • 2 large cucumbers thinly sliced
  • 1/2 small red onion thinly sliced
  • 1/4 cup fresh dill chopped
  • 1/4 cup white wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the sliced cucumbers, sliced red onions, and chopped dill.
  • In a small bowl, whisk together the white wine vinegar, olive oil, and sugar until the sugar dissolves. Add salt and pepper to taste.
  • Pour the vinegar and oil mixture over the cucumber mixture and toss to combine well.
  • Cover and refrigerate the salad for at least 2 hours before serving to allow the flavors to meld.
  • Toss again lightly just before serving.

Notes

This Summer Cucumber Salad is incredibly flexible. You can add some cherry tomatoes for a burst of color and extra freshness. If you want to give it a little more crunch, try adding bell peppers or radishes. You can even add a handful of crumbled feta or goat cheese if you're a cheese lover.
